Culinary Research & Development Manager

Improve the MTO offerings by managing bench top development of quality products. Increase our bench time and focus resulting in more unique, signature ingredients to support our variety and breadth of offerings. Uphold and exemplify high culinary standards while developing consumer focused concepts in order to strengthen Sheetz position as a leader in the Restaurant Industry.

1. Manage Bench top projects under the leadership of the Director of Culinary Development for MTO maximizing progress on R&D priorities.

2. Develop items that increase reorder intent through flavor/taste. Creating memorable products that keep our brand top of mind for customers.

3. Develop ingredients, test equipment and process that enhance/broaden our opportunity to increase flavor, culinary integrity, variety and customization.

4. Document the process’s from the bench top to the Innovation Store looking for opportunities to improve the process.

5. Manage test store implementation and support the transition of our Made to Order products to from a R&D test to District Test.

6. Support alternate sourcing of high risk MTO ingredients.

7. Engage vendor in supporting our mission by leveraging their core competencies.

8. Align area objectives with the strategic goals of the Department.
9. Monitor annual budgets for assigned area of responsibility to maximize profitability.

(Equivalent combinations of education, licenses, certifications and/or experience may be considered)

Education
• 4 year degree in Culinary Arts required

Experience
• Minimum of 5 years of R&D Experience within a restaurant concept or lead ingredient supplier required
• Minimum of 5 years kitchen or test kitchen experience required
• Experienced with all types of kitchen equipment preferred
• Understanding of Genesis Nutrition System preferred

Licenses/Certifications
• Serve Safe Certification

Tools & Equipment (Other than general office equipment)
• Kitchen tool and equipment knowledge
